“Greek Butter Cookies”
1 pound of unsalted butter
¾ cup sifted 10X powdered sugar
4 ½ cups pastry flour ~ sifted twice
2 egg yolks
1 teaspoon vanilla
3 tablespoons brandy
Preheat oven to 350.
Beat butter thirty minutes with a mixer. Add the sifted sugar. Add egg yolks, vanilla, and brandy. Add flour gradually. Mix to a soft dough and chill for thirty minutes. Form into oblong shaped cookies of rather generous proportion and bake 20-25 minutes until lightly brown. After they’re cooled, dust lightly with powdered sugar.
